Tomato - garlic chutney

In my Aerobics class we all usually share different receipes. one such was tomato-garlic chutney shared by shruthi, which she says tastes best with aloo-paratha,but i feel it is more tastier with our very own curd rice!



Ingredients:
  • Tomato - 2 to 3 large
  • garlic - 8 to 10 flakes
  • gingelly oil - 4 tsp
  • salt - to taste
  • chilly powder - 1tsp

Method:

  • Clean and wash the tomatoes and directly blend them in to a puree in a mixer grinder
  • In between add the garlic flakes and grind well
  • Now heat a kadai and add gingelly oil and when hot add the pureed mixture
  • Add salt and chilly powder and stir well till oil seperates and serve

Till Rice (ellu sadam)

Most of the time Dinesh has lunch and even dinner outdoors because of his meetings with clients.
So i end up wondering what to cook for myself which is really boring. I saw in my cooking shelf i had stored till seeds in a small glass jar and thought why not make some spicy till rice.

Ingredients:

  • cooked rice - 1 cup ( do not over cook the rice )
  • gingelly oil - 4 tsps
  • urud dal - 1 tbsp
  • red chillis - 4
  • till seeds - 1 tbsp
  • hing/asofoetida - a pinch
  • salt - to taste

Method:

  • Heat a kadai and add just little oil ,when hot add till seeds,urud dal,red chillies and fry them continously till the seeds splutter and dal changes colour
  • now transfer them into ablender and make a fine powder
  • In a mixing bowl, take hot steamed rice and add salt and 4 tsp of gingelly oil
  • slowly add the blended powder and mix well thouroughly and smoothly (do not smash the rice ) and serve

Serving sugesstions:

can be garnished with fried peanuts and taste best with chips/papadams

My Tea pot /Kettle


Earlier before marriage , i hardly drink tea. Coffee and milk are the only beverage that i have. My Grandma says only tamasic people prefer tea and it is not good for brain and makes you dull! She forces me to drink milk only!
After marriage i found in my in-laws place that it was always an tea time evening!
We all make it a point to have tea together atleast on the weekends.
  • Ginger chai
  • masala chai
  • cardamom chai ( my fav)

are commonly made. I prefer more of milk in my tea, some people prefer more of water.

Though initially i was apprehensive about tea i started a liking for it. But my all time fav is always coffee, coffee and only strong filter capi !

Penne Florentine

Bored of the same indian food daily,try out some italian and mexican food !
I love thin crust italian pizza along with authentic italian soups, dinesh loves lasania.

I would like to share a simple receipe of pasta/penne , slightly indianised, so everybody would simply love it!



Ingredients for penne florentine:
  • Penne - 100 gms
  • palak/green spinach leaves - 3 bunches (depending on their size!)
  • 2 cups of milk or 1/2 cup of cream
  • black pepper - 1 tsp grounded/powdered
  • green,red and yellow capsicum - each 1 sliced
  • oil - 3tsp
  • salt - to taste

Method :

  • Cook penne/pasta as we do normally,strain and wash in cold water and add some oil so that it does not stick with each other.
  • Clean and wash palak/spinach leaves several times,boil and grind them into a paste(as we do for palak panner)
  • Heat a kadai add oil and fry the red ,yellow and green peppers and remove them in a cup
  • now in the same kadai add the blended pureed spinach and when it comes to a boil add salt and the fried peppers
  • slowly add the cooked penne and stir well snd wait for two mins so that the penne binds well with spinach
  • Add a tsp of pepper for spice and milk or cream.
  • Stir well for a minute and serve hot!

Serving suggestions:

Taste best along with garlic bread and some corn soup!
